This is my mom's meatloaf recipe that I tweaked slightly. It is delicious and moist without being heavy or greasy. I love the browned top and edges of meatloaf, so I make this in a 13x9 pan so there is more of the delicious top and edges.

  1. Preheat the oven to 350°F.
  2. Soften the oats in the milk for 5-10 minutes.
  3. Stir in the eggs, the seasonings and sauces, and the pureed vegetables.
  4. Add the ground beef and mix well (I usually do this part with my hands).
  5. Add enough breadcrumbs so that the mixture isn't goopy. You may need more or less breadcrumbs depending on how wet the meat and pureed vegetables are.
  6. Pack the meat into a 13x9 pan.
  7. Bake at 350F for 1 hour 45 minutes.
