Meatless Tater Tot Casserole

  • 340.19 g package vegetarian meatballs (we like Nate's)
  • 411.06 g can cream of mushroom soup
  • 118.29 ml frozen peas
  • 177.44 ml cheese (shredded)
  • 453.59 g package tater tots

directions

  • Preheat oven to 375°F.
  • Use a 9x9 pan and place a layer of meatballs in the bottom.
  • Add peas on top of meatballs.
  • Sprinkle cheese on top of meatballs and peas.
  • Pour soup over all of the above ingredients and mix with a spoon. Re-space the meatballs evenly.
  • Place tater tots evenly on top of mixture.
  • Bake uncovered for 40 minutes. Tater tots should be golden brown on top.
  • Let cool and thicken 5 minutes before serving.

I'm a full time mama of a 1.5 year old toddler and work part time as a patternmaker for a childrens clothing manufacturer. I'm an urban dwelling vegetarian interested in good, fresh, organic/local foods and recipes. I'm also a firm believer that food should not be dumbed down for children. My little grrl eats what we eat... no french fries and chicken fingers here. If she isn't eating port wine and portabello ravioli with blue cheese sauce she's munching on falafel or indian curry.
