Dinner stands alone with this salad. No meat in this one.
- 4 hardboiled egg
- 4 cups torn fresh spinach
- 1 (15 ounce) can garbanzo beans, drained
- 1 cup cauliflower floret
- 1 cup sliced fresh mushrooms
- 1 cup cherry tomatoes, halved
- 1 small cucumber, thinly sliced
- 1⁄2 small red onion, thinly sliced and seperated
- 1⁄2 cup coarsely chopped walnuts
- Slice eggs.
- Mix all ingredients in a large salad bowl.
- Serve with dressing.
