Meatballs in Peanut Chile Sauce

ingredients
- 40 frozen meatballs
- 2 tablespoons chunky peanut butter
- 1 cup coconut milk
- 1 tablespoon red chili paste
- 2 teaspoons soy sauce
- 1 1⁄2 tablespoons white sugar
directions
- Mix all ingredients together except meatballs. It's okay if it's still chunky.
- Place meatballs in crockpot. Pour sauce on top.
- Cook on low for 4-6 hours. Serve over hot rice.

Love this recipe. It's super easy. I first made it for an office potluck. I wanted something in a crockpot but I didn't want to bring the same old meatballs everyone else makes. These were such a hit!! They are really great for appetizers. If being used as a main dish with rice or something I would want more sauce but I've only made these for potlucks so it's worked out well. I call them Thai Meatballs when signing up for the potluck as the chili paste/peanut/soy blend is similar to what many would recognize as Thai. I also end up using frozen italian meatballs every time as my grocery store doesn't have much of a selection but the little bit of italian spices in the meatballs doesn't seem to conflict with the recipe. Everyone raves, every time. Thanks for a great recipe.
