Hubby was pleasantly surprised by this as he loves stew. I didn't use celery nor wine but it still tasted good. The thyme really added a nice flavour.
Dh (meat and potato monster)says, "Awesome." I did want leftover meatballs for a sandwich so I used Kim Wilson's meatball Meatballs. I left the pot covered while it stewed but the liquid reduced down to 1 cup so I added beef broth to make 2 cups total liquid and then thickened it as directed. It was perfect. Loved the thyme.
this is basically my beef stew recipe, but i add, and did add to this, 1/2 tsp dried chili flakes, and 1/2 c barley for texture and thickening to the onion/broth mixture i made the meatballs in the micro, on a tray covered with wax paper, 3 minutes, then turn and re-cover (lol, not recover!) 2 minutes more. add to the pot, simmer, enjoy. good home cookin'
I made this as directed and my family found it to be edible but not something to make again. I must say that roux in my world is equal parts of butter and flour browned. I'm not sure if I understand what you mean by flour and water roux with lumps removed. At any rate, I did as instructed and found the final result to be just kind of blah. Sorry - I really hate giving poor reviews.
Good stew. To save time I did not cook the onions and celery ahead, just added with the rest of vegetables and simmered everything about 25 min. The flavor was still great. Also spiced up the meatballs a little and added some eggs, milk and breadcrumbs for juiciness.
