- 1 cup onion, diced
- 2 tablespoons olive oil
- 1 cup celery, diced
- 1 cup carrot, diced
- 1⁄2 teaspoon garlic, crushed
- 2 tablespoons flour
- 4 cups chicken broth
- 20 -24 meatballs
- 2 -3 cups prepared brown rice
- salt, to taste
- pepper, to taste
directions
- Heat olive oil in large saucepan and sauté onion, garlic, celery and carrots for 5 minutes.
- Stir in flour to coat vegetables. Add chicken broth, meatballs, salt and pepper.
- Bring to a boil. Reduce heat and simmer for 10-15 minutes.
- Add prepared brown rice and serve immediately.

This is a really great idea and allows for a lot of diversity! I had some fancy cranberry-jalapeno meatballs left over from Christmas brunch, and used them...and added frozen okra. It made the soup kind of like a meatball gumbo! But without my amendments, the meatballs and brown rice make a satisfying soup that comes together in a jiffy. Thank You, Ceezie!
