  • Heat olive oil in large saucepan and sauté onion, garlic, celery and carrots for 5 minutes.
  • Stir in flour to coat vegetables. Add chicken broth, meatballs, salt and pepper.
  • Bring to a boil. Reduce heat and simmer for 10-15 minutes.
  • Add prepared brown rice and serve immediately.

  1. This is a really great idea and allows for a lot of diversity! I had some fancy cranberry-jalapeno meatballs left over from Christmas brunch, and used them...and added frozen okra. It made the soup kind of like a meatball gumbo! But without my amendments, the meatballs and brown rice make a satisfying soup that comes together in a jiffy. Thank You, Ceezie!
