- 453.59 g hamburger
- 29.58 ml chopped onions
- 29.58 ml green peppers
- 59.14 ml cornmeal
- 4.92 ml salt
- 7.39 ml dry mustard
- 4.92 ml chili powder
- 118.29 ml milk
- 1 slightly beaten egg
- 59.14 ml flour
- 29.58 ml shortening
- 473.18 ml tomato juice
- 3 potatoes, quartered
- 6 carrots, halved
- 15 small onions
- salt
directions
- Combine meat, onion, green pepper, corn meal, seasonings, milk, and egg.
- Mix thoroughly and form 12 balls.
- Sprinkle with flour and brown in hot shortening.
- Place in 4 quart casserole.
- Add remaining flour to browning skillet, blend and add tomato juice.
- Cook until thick; pour over meatballs.
- Arrange vegetables around meatball.
- Add salt and cover tightly.
- Bake at 350 for 1 hour.

This is good stuff! Not at all like boring old stew. Very flavorful, the meatballs are just delicious. My kids don't like stews, and they enjoyed this. Of course I did tell them the meatballs were made from Doritos (they're not, of course, but I do what I can to get them to try new things :)). Used a 5-quart oven proof saute pan to cook the meatballs in olive oil rather than shortening and then bake which worked very well. The meatballs are pretty wet, mine were a little flatter than balls, but they hold together nicely and come out moist. Carrots and potatoes have enough sauce to be well-flavored. Yum! So glad you shared the recipe! Made for PAC Fall 2007.

I love having people over for special occasions and just to have supper with us. I have been married 35 years and have 3 daughters.
