Meara's Marvelous Meat Loaf

"My daughter and I came up with this meat loaf. It is a kind of a combo of several different recipes with our own special twists ... it calls for oats instead of saltines or bread and we used 95% lean ground beef. Next time we are going to double the sauce and serve it on the side. YUM!"

  • Mix all the meat loaf ingredients together in a large bowl.
  • Place meat mixture in a 5 x 9 loaf pan.
  • Bake in a 325 F oven for 75 minutes.
  • Meanwhile, combine sauce ingredients and mix well.
  • Remove loaf from oven and turn it out into a larger, oven-proof dish.
  • Make several cuts in the loaf (but do not cut all the way through.).
  • Using a spatula or brush, spread sauce over the scored meat loaf.
  • Return sauce-covered loaf to the oven and bake for an additional 30 minutes.

I am from the NE corner of the great state of South Dakota---yes, people really live here! : ) I live with my hubby, 7-year-old son, and 9-year-old daughter. Older daughter (age 20) is out of the nest, but comes over dinner every now and then... actually, she shows up at supper time A LOT! : ) It can be a challenge to cook to please all of them. So hopefully Recipezaar will help us find some menu items we can all enjoy! Hubby and I really enjoy cooking together, particularly on the grill, which has been highly successful both in regards to taste and fun! I work for our local daily newspaper, circulation approximately 15k as a special sections editor. My sections run the gamut from holiday gifts to health to kids to hunting & fishing and pretty much anything else we can come up with! I LOVE my job - it gives me a spectacular creative outlet through the writing, design and layout. Hubby and I are also into home improvement projects. We just completed renovating a farmhouse and sold it, It was a lengthy but fun project. Now we are turning our attention to our flower and veggie garden as well as some interior decorating.
