Mazurek Topped With Apple

"Is a type of shortbread which is served at Easter. When cool can be decorated with powdered sugar glaze and slice almonds. For ease I make it in the food processor but you can make by hand!"

  • Mazurek base:

  • Sift together all dry ingredients by pulsing in food processor.
  • Add chilled butter into flour pulse until crumbly.
  • Add beaten yolks with cream and add to flour mixture, just till it comes together when squeezed with fingers, but still will be crumbly.
  • Press dough into pan.
  • Lay on buttered 8 inch square cake pan, pressing in to evenly cover the base.
  • Chill for 5 minutes.
  • Bake for 20 minutes in a preheated 350 degree oven.
  • Mix apples and Southern Comfort together.
  • Remove base from oven and cover with apple topping.
  • Bake 20 minutes longer.
  • Cool dust with powdered sugar or top with a sugar icing and garnish with sliced toasted almonds.
  • Cut into 16 finger size servings.

  1. I cooked up some apples with tbsps sugar for the pie filling. Unfortunately I didn't have any almonds...they make it look so nice on the picture!! It still tasted lovely though!

  3. Easy to make, delightful to eat! Being without Southern Comfort, I took my cue from the almonds in your lovely photo & used Amaretto. I will admit to eating more than my share of the crust - (it tasted like a shortbread cookie) but DH prefers the filling anyway. This teamwork resulted in an empty pan pretty quickly! Thanks for another winner of a recipe!
     
  4. 5 1/2, Rita!! I was idly surfing through the Zaar World Tour reviews & pics, and came across this. It sounded quick and easy, and it was! It's delicious! I did make a few tiny changes but the basics stayed the same. I added 1 more teaspoon baking powder, and 1 t vanilla to the base and some seedless raisins (sultanas) to the apples. I also had to add sugar to the apples, as all our tinned apples are unsweetened. I think my tin of apples (metric) was larger than specified by you, but covered the base nicely. Used rum as we have no Southern Comfort in house. Next time I'll try whisky. This is a keeper, and ideal when guests are coming and like me, you're tired of the same old, same old ... Thanks for a great recipe which will be used again and again!! Husband said wistfully: "Why not make this at least twice a week ...?" LOL!
