Directions

  1. Mix seasonings. Add yolk. Mix well. Add 1 tbsp vinegar. Add salad oil, a few drops at a time, beating constantly. As mixture thickens, oil may be added more quickly. Add remaining vinegar.
  2. For RUSSIAN dressing: to 1 cup of mayonnaise, add 1/2 cup chili sauce and 1 TBSP lemon juice.
  3. for THOUSAND ISLAND dressing: to 1 cup of mayonnaise, add 1/4 cup chili sauce, 2 TBSP chopped green pepper, 1 chopped hard cooked egg and 2 TBSP chopped green olives.
