Spicy chicken & veggie dish

  1. Place chicken , water, salt, pepper, margarine, and celery in a large skillet over medium heat.
  2. Cook one side 8 minutes then add spices.
  3. Turn chicken and add veggies.
  4. Cover & cook 10 minutes. Veggies should be tender & chicken cooked through.
  5. Add cooked quinoa and heat until all liquids are absorbed.
  6. Spoon into individual plates and sprinkle with cilantro.
