This is a very good "Twist" for sweet potatoes.
- 4 medium sweet potatoes, cooked and mashed
- 1⁄4 cup butter, melted
- 1 dash salt
- 4 tablespoons brown sugar
- 1⁄2 teaspoon nutmeg
- 1 cup orange juice
- 1⁄2 cup pecans, chopped
- Boil, cool, peel and mash potatoes or use 1 can sweet potatoes.
- Add remaining ingredients.
- Mix well.
- Pour into buttered casserole.
- Top with chopped nuts.
- Bake 350* 15 min.
With a couple changes, these were delicious and very well received around the table. My teenage son prepared these for dinner last night. We reduced the orange juice to 1/3 cup, and that was plenty. We reduced the nutmeg to 1/4 teaspoon. My son inadvertently mixed the pecans into the mashed potatoes before baking, but that gave them more texture and flavor throughout. These perfectly offset a crunchy garlic chicken entree. A very good twist on sweet potatoes, indeed. We enjoyed these a lot!
The orange juice-nutmeg combination was overpowering.I guess it wasn't what I was expecting. Also I had to substitute walnuts for pecans, it would be better with the pecans.
Made this as a side dish for dinner and it was quite good. I did substitute milk for the oj and cinnamon for the nutmeg. Great make ahead. Thanks for posting.
