Mashed Potatoes With Ham

"I made homemade mashed potatoes with a ham, but I wanted to mix it up a bit. I found this recipe on Taste of Home and added a bag of peas and carrots to it. I also left out the cornflakes. I also cooked the onions on the stove and didn't dot with butter because I wasn't using cornflakes. Recipe is posted as written. Good stuff!"

  • 12 cup finely chopped onion
  • 2 tablespoons butter, divided
  • 3 12 - 4 cups hot mashed potatoes (prepared with milk and butter)
  • 1 12 cups cubed cooked ham
  • 14 teaspoon onion salt
  • 18 teaspoon pepper
  • 12 cup shredded cheddar cheese
  • 13 cup crushed corn flakes

  • In a larg microwave-safe bowl, combine onion and 1 tablespoon of butter.
  • Microwave, uncovered, on high for 2 minutes or until tender, stirring once.
  • Add potatoes, ham, onion salt, and pepper and mix well.
  • Transfer to a greased 1 1/2 quart baking dish. Sprinkle with cheese and cornflakes and dot with remaining butter.
  • Bake, uncovered at 375 for 15 minutes or until heated through.
