Mashed Potato Spinach Casserole

"This is one of my old stand-by recipes from the More with Less Cookbook. It's a good one for those nights when I don't really feel like cooking. I suppose this is meant to be a side dish, but I always up the amounts a bit and serve it as a meatless main dish. The original recipe calls for the addition of dill seed and chives, but I never use them for our family."

  • Peel, cook and mash potatoes.
  • Add sour cream, salt, pepper (and butter if desired).
  • Mix in enough milk to bring it to your favorite mashed potato consistency.
  • Add spinach (and seasonings if desired).
  • Place in casserole dish and top with grated cheddar cheese. (sometimes I also mix a bit of the cheese in with the potatoes before topping).
  • Bake in 350 oven for 20-30 minutes.
  • We like to serve this with corn, which usually ends up mixed in with all the rest.

  1. We normally have just cheesy mash, so I thought that adding some spinach in there would make a nice change. We loved this! It was the perfect side to our steak! Really easy to make and delicious!
     
  2. YUM! I love spinach, but DF is not too fond of it (along with mushrooms). However, I always find try to find a way to put them in many dishes. He loved these potatoes so much, he asked for seconds! YAH! I only had 2 large russets, 10 oz of frozen spinach, and 1/2 cup colby jack on hand. I made mashed potatoes as I normally would: boil, drain, mash. I added the butter and appropriate milk, continued with sour cream and cheese, salt and pepper. Although I wish I would have had more cheese on hand, I think it turned out great! Even with being 2 potatoes short from the recipe, we still ending up having 5 large servings. It seems like that kind of recipe that as long as you have the basic ingredients, you can fix it up any way you like. Great, love it! I am going to start making it all the time. :)

  1. I hate spinach... but not with this recipe! I changed a few things. I used fresh spinach, dill instead of dill seed, sweet onion instead of chives and added about a handful of romano cheese. This was so good, and tasted very ukrainian (which I am and love). Thanks so much!!

The first time I ever set foot on California soil (or anywhere in the West, for that matter) was the day I moved here. I experienced a form of culture/environment shock for about a year&nbsp;- even the air is different out here! For the first year, I would look at the roads and driveways that wind steeply up and down the foothills and think, Man, how does anyone drive on those in the winter? Then I would remember&nbsp;- they do it the same way they do in the summer&nbsp;- with their windows down, wearing shorts and flip-flops. I love the fact that we are near a large city, near the ocean, near the desert, near the mountains&nbsp;- what more could I ask for? And yes, even though I swore it wouldn't happen to me after living for more than 40 years in places with many weather extremes&nbsp;- I now get chilly when the temperature dips below 70 and can barely bring myself to go outdoors if it's raining. However, I do NOT wear a parka and mittens when it's 65 degrees&nbsp;- a sweatshirt or light jacket will do. <br /><br />My husband and I met while attending seminary (I dropped out before finishing one semester but he got a Master of Divinity) and we got married after knowing each other for 6 months. We are quick to tell other people that we do not advise this course of action, but we celebrated our 27th anniversary this year, so I guess sometimes rash decisions work out quite nicely. So with my husband's MDiv and my undergraduate degree in religious studies, we now both work in pharmaceutical marketing research. Just what you would expect, right? I telecommute to the east coast for work each day; I'm primarily a writer/analyst. When I was in college, writing so many research papers and unable to decide what I wanted to do when I grew up, I used to jokingly say that I should find a job writing research papers. More than 20 years later, that?s basically what I do. Cool, huh? <br /><br />Our wonderful son was born when we were married just one year and a mere 15 years later our bright-eyed redhead came into our lives (okay, so she was totally bald till she was nearly 2, but she's definitely red now).
