ingredients
- 236.59 ml molasses
- 118.29 ml butter
- 236.59 ml cold mashed potatoes
- 473.18 ml flour
- 2.46 ml salt
- 9.85 ml baking powder
- 2.46 ml baking soda
- 4.92 ml cinnamon
- 2.46 ml nutmeg
- 2.46 ml ground cloves
- 236.59 ml chopped walnuts
directions
- In large saucepan heat molasses and butter til the butter melts.
- Stir in the potatoes mixing til smooth, add dry ingredients, mix well.
- Mix in walnuts.
- Drop onto greased sheet, bake at 375' 10-12 min.

Yum yum, what a great way to used up leftover mash! Made these with a bit more mash (because I had more)and 1/2 cup of coconut (because I ffelt like it). The mix was too thick to 'drop', but I spooned rounds onto a baking sheet, then squashed flat with a fork. They were delicious - spices were just right - and I'll definitely be making them again! A great change, as you say, from the usual uses for leftover mash.

I'm not adding stars because my ingredients may have affected the result. I absolutely love molasses but it was completely overpowering in these cookies, to the point that no one would eat them and I ended up throwing them away. Recipe calls for no granulated sugar but 1 cup of molasses which is a lot. I use organic molasses which is very dark brown and may be more intense than other brands. Since other reviewers didn't report any problems, I suspect the issue may have been my molasses. I really wanted to love these cookies and may try them again with 1/2 cup organic molasses and 1/2 cup granulated sugar. The cookies were moist and cakey and didn't spread much on the greased sheets.
