Mashed Potato Casserole

"This is my Mother's recipe. We always have this whenever we make a holiday ham dinner. It was a big favorite of my late husbands, he would lick the bowl I mixed them in even before baking them. I always have to double this because I have often run out of them with everyone taking seconds and thirds. This can easily be made a day ahead and baked on the day you serve it."

  • Boil potatoes until tender.
  • Drain and mash potatoes, In a large mixing bowl add to potatoes the butter, cream cheese, sour cream, salt and pepper. Mix well, beating with electric mixer until smooth.
  • Stir in chives.
  • Transfer to well greased casserole dish. Sprinkle with paprika and dot with additional butter if desired.
  • Bake at 350 degrees for 35 minutes.
