Cheddar Cheese Mashed Potato Casserole

"I used this recipe a lot when my kids were younger and it was helpful to have part of supper ready ahead of time. Especially because babies ALWAYS seem to be fussy when it is time to make dinner. Works great for company or potluck too."

  • Peel and cook potatoes until tender.
  • Mash potatoes with onion salt and sour cream.
  • Add butter.
  • Place in a 2 quart casserole dish and press down slightly.
  • Top with cheese. Refrigerate overnight. Bake at 350°F for 1 hour.

  1. Loved these potatoes, wonderful flavor, a flavored cream cheese like onion/chives would be a good addition as well. Very easy to make and you can make as much or as little as you want.
     
  2. I make this with larger red potatoes, replace onion flavor with regular salt & pepper, and add 1 8 oz block of Philadelphia Cream Cheese. I serve it with chopped onions and shredded extra sharp cheddar so guests can doctor their own, as some folks just want turkey gravy. FYI, I reserve the potato water and use half and half with milk to make my turkey gravy. THEY LOVE IT!!!!
     
  3. I made this with new red potatoes- cooked then mashed with the skins on. I also used extra sharp cheddar cheese ( i used only about 1/2 cup)And I didn't refridg overnight --the potatoes tasted great! Thank you
     
  4. Very good!!!! I halved the recipe for 3 of us and because my oven was cooking pork tenderloin at 425° I used my toaster oven set at 350°. It turned out delicious and we ate it all. Thanks for the great recipe.
     
  5. I used my left over Rosemary ,Roasted Garlic, Cheese, Mashed Potatoes recipe #75297. Prepared it as I put the leftovers away so it was ready to bake the next day! No one every knew they were eating leftovers!
