Creamy and delicious. Can be made ahead.
- 10 -12 potatoes
- 1 (8 ounce) cream cheese
- 1⁄2 cup butter
- 1 teaspoon salt
- 1 cup half-and-half
- 1 -2 tablespoon melted butter
- Peel, cook and drain potatoes and mash. Beat cream cheese with half and half. Add potatoes and beat well. Add other ingredients, except melted butter and paprika and beat well.
- Place in buttered casserole. Brush top with melted butter. Sprinkle top with paprika. Cover and refrigerate overnight.
- Bake at 350 degrees for 45 minutes uncovered.
This was delicious and got raves from my guests. It was a beautiful presentation with the golden crust on top, and very easy to do ahead and then just reheat and serve.
