  • First wash and peel the parsnips (I save the peels for making Veg. Stock but you can recycle them or compost them) Cut in to smallish pieces like you would a carrot.
  • Pop them into a pot of water and bring to a boil (much like you would do for mashed potatoes). Boil until a fork inserted into a piece goes in smoothly. About 15-20 minutes.
  • Drain and put back in pot (to keep warm) and mash with the butter and milk.
  • (*note: I use only UK butter, it has a higher percentage of milk fat and makes a creamier consistency.).
