There are many Mock mashed potato recipes here: using sour cream, mayonaise, cream cheese, etc... My favorite way to prepare it uses goat cheese, it gives it a tangy flavor that is special. Hope you enjoy my favorite low fat/low calorie comfort food!
- 1 head cauliflower
- 56.69 g chevre cheese (soft, low fat goat cheese)
- 14.79 ml Molly McButter
- salt & pepper
- Cut cauliflower (including stems) into chunks. Microwave in a covered dish for 8 minutes.
- Combine all ingredients in bowl of food processor and blend to desired consistency (don't forget to scrape down the sides).
- Sit down to a big bowl of warm, creamy, delicious comfort food that won't ruin your healthy diet!
Delicious! What I like best about this recipe as opposed to the many others on 'Zaar is that it's only 3 ingredients (fast and very easy to make) and doesn't use a lot of butter, cream and cheese. Awesome! I love chevre in mashed potatoes ad I loved it in this mashed cauliflower just as much. I didn't have butter buds, so I used 1 tbsp of real butter. Loved the smooth texture and tangy flavor. Fresh chives would be excellent to mix in this; I'll hve to do that next time. Thanx for sharing!
If you LOVE the taste of chevre (goat cheese) you will love this recipe. I used 1 1/2 tablespoons of margarine instead of the butter buds. It added moisture to the dish. When I cooked the cauliflower in the microwave, I put it in a dish and covered with plastic wrap. When the cauliflower was cooked, there was extra moisture. I also added that moisture to the recipe. I used a hand mixer to cream/blend the recipe which reminded me of a chunky not creamy mashed potatoes but excellent tasting! I will make this again but I won't use goat cheese; a personal preference, perhaps feta will make five stars for me? Thanks for submitting a recipe not filled with butter, whole milk, etc. that results in a comfort food.
