If you are looking for a non-cheesecakey mascarpone substitute, this is defiantly the way to go
- Whisk egg yolks, sugar, and milk--simmer 2-3 minutes. Cool, and fold in ricotta cheese. In a separate bowl whip the heavy cream until it peaks. Add whipped heavy cream and milk mixture in a food processor until it forms a homogeneous cream.
