Mascarpone Creams

"While this dish does not require baking, it does use eggs. If you are uncomfortable with the raw eggs, perhaps there are substitutes for the egg yolks and the whites. If you like Amaretti cookies, amaretto and mascarpone cheese, you will like this dish. Prep time does not include refrigeration time."

  • Place the Amaretti crumbs in a bowl, add the Amaretto and set aside to soak. Meanwhile, beat the egg yolks with the superfine sugar until pale and thick. Fold in the mascarpone cheese and soaked cookie crumbs.
  • Whisk the egg whites in a separate bowl until stiff, then gently fold into the cheese mixture. Divide the mascarpone cream among 4 serving dishes and let chill for 1-2 hours. Sprinkle with toasted slivered almonds just before serving.

  1. WOW! This was so simple to make and super fast for such and elegant dessert. I made it as written, just reduced to two servings. Due to a time crunch I'm rating a little early before my creams have chilled properly - it doesn't matter the batter itself is so delicious! Toasted almonds and a few amaretti crumbs make the perfect topping adding a nice textural contrast. Thanks for sharing! Made for 2014 Culinary Quest for the Cruisin' Culinary Queens.
