I received this recipe from my aunt's friend. She didn't want to give me the recipe, but did anyway... so here it is for ALL to enjoy!
- 1 cup sour cream
- 1 cup mayonnaise
- 1 (10 ounce) package frozen chopped spinach, thawed and well drained (hand squeeze to drain)
- 1 1⁄2 tablespoons chopped onions
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- Combine all ingredients and mix well.
- Refrigerate until serving.
- Best when chilled at least 6-8 hours.
- Serve with crackers or fresh veggies.
I had to add a can of water chestnuts but followed exactly otherwise. We felt some green onions would have been good to and will try that next time. Superb!! Love this alternative to the sodium heavy soup mix version. Thanks Kim, Good recipe.
I have made this recipe for eons, but make it double for a croud! Only 1 pkg of Knorr Veg soup mix, 1 small jar of lo-fat mayo, a medium + a small container of lo-fat sour cream, 2 pkgs chopped spinach, 2-4 cloves of crushed garlic and 3 chopped green onions. Everyone goes crazy over it and wonders what the "secret" ingredient is! (garlic, I presume?) It MUST be refrigerated and stirred a few times for 24 hours before serving to let the flavours blend! I serve it in a hollowed-out sourdough bread round with the insides cut into cubes and then another loaf cut into cubes as well. There never seems to be enough!
This is the recipe I have been looking for. I did mince the onions in my food processor, becuz I don't like my spinach dip crunchy. My mom always served this in a bread bowl with plenty of dipping bread. Brings back memories. When you grew up eating this spinach dip the other recipes that use soup mixes just do not add up. Thank you so much for posting.
