Mary's Creamy Tomato Spaghetti Pie

- 1 lb ground beef
- 6 -10 ounces spaghetti noodles
- 2 tablespoons margarine
- 1⁄2 cup parmesan cheese
- 2 eggs, well beaten
- 1 cup ricotta cheese
- 1⁄2 cup onion, chopped
- 4 slices american processed cheese
- 6 ounces cream cheese
- 1⁄2 cup milk
- 3 cups spaghetti sauce
directions
- Brown ground beef and onion together and drain, set aside.
- Cook Spaghetti Noodles according to package directions, drain & cool.
- Spray 8 x 11 inch casserole dish with non stick spray.
- On stove top heat spaghetti sauce and cream cheese until the cream cheese is melted. Stir in milk until combined.
- Add beaten eggs and Parmesan cheese to the spaghetti noodles, mix well.
- Pour into casserole dish and form into a crust by pushing noodles up the sides as best you can.
- Spread Ricotta cheese over noodles.
- Top with 4 slices of American cheese.
- Layer ground beef and onion over American cheese.
- Top with Sauce mixture.
- Bake in oven at 350 for 30 minutes.
- Take out of oven and let sit for 5 minutes before cutting.

I am a working mother of 3 children. The oldest is 3 soon to be 4, and the twins are now 19 months old. It is a very busy house so I am always looking for easy, kid friendly receipes to make for dinner. Dinner is usually whatever I can whip up in 15 minutes after we pick up the kids from daycare. All of the kids are usually hungry when they get home, which does not leave me a lot of time to make dinner. Dinner is also tricky since my husband will not eat pasta or rice. He does not like new foods. I sometimes just make dinner for the kids and myself and leave him to fend for himself since he is so picky.
