Marylou's Holiday Sweet Potatoes - No Marshmallows
"Thought it was about time I shared this luscious sweet potato dish. It makes the house smell wonderful. These do take a bit of time, but it's worth it! We've been having these for about 40 years. Hope you enjoy them as much as we do. Leftovers, if you have any, may be frozen for later enjoyment."

- 3 (28 ounce) cans yams or (28 ounce) cans sweet potatoes in syrup
- 1 cup brown sugar
- 3⁄4 cup sweet butter
- 1 navel orange, sliced thin
- 1 (20 ounce) can pineapple rings, divided
- 1⁄4 cup prepared mincemeat (optional)
- 6 ounces frozen orange juice
- 1⁄4 teaspoon allspice
- 1⁄4 teaspoon nutmeg
- 1⁄4 teaspoon cinnamon
directions
- Combine all ingredients, except pineapple rings, in large Dutch oven .Remove 6 pineapple rings from can and set aside. Mince remaining rings and add to sweet potatoes, including juice.
- Stirring frequently, on high heat, bring mixture to a boil. Immediately reduce to med-high and cover. Cook for 30 minutes.
- Stir mixture and place pineapple rings on top, cover and bake at 250F for 1-1 1/2 hours.
- Check periodically and add additional orange juice if needed.

Made this the other day for one of my neighbors' family gatherings, since she's not able to do a lot of cooking right now, & after my generous taste-test, I definitely know that, another time, I'm wanting to make this to serve right here at home! I thoroughly enjoy trying new sweet potatoe dishes, & this one is certainly a winner ~ I particularly enjoyed the flavor combo that included mincemeat (which I always have on hand), orange & pineapple (& no marshmallows on top, either)! As you can see, I've been on "Zaar quite a while now, and have reviewed quite a few recipes. Just like everyone else who's been around for a while, my rating system has undergone a change.

BTW, if I forget to thank you for taking the time to prepare one of my recipes, it is unintentional!
My biggest passion is my reading. I can't go to bed at night until I have read something, even if its the back of a bag of potato chips! But that ain't gonna happen. I have over 300 books in my bedroom book shelves, and we have even more in the rest of the house!
