"My brother got this recipe from his best friend's mother when he was a teenager, passed it on to me when I was in my 20s, and it has been a favourite ever since. Even my kids like it, if I omit the peppers."

  • saute bacon, onions, peppers and garlic until tender. Add tomatoes. Add chicken broth, wine and seasonings. Bring to a boil and add rice. Reduce to a simmer - stirring occasionally and checking the liquid level, adjusting if necessary. When rice is cooked, add meat and/or seafood and heat through quickly.
