Made this for lunch today with cherry tomatoes (the only tomatoes I buy in the winter). You can't beat the simplicity and taste of bruschetta. I loved it.

Directions

  1. Preheat broiler.
  2. In a bowl combine the tomatoes, basil, olive oil vinegar and salt. Toss well.
  3. Place the bread on a baking sheet and broil both sides lightly (about 2 min total)
  4. Remove and rub one side with slice of garlic clove.
  5. Arrange bread garlic side up and spoon on topping.
  6. Serve at once.
