Martha's Gingerbread Men

"This recipe makes a large batch that can be made about a week ahead of time for Christmas or just cut into rounds for eating with coffee at any time of the year. Hide them though, because I often end up having to make more at the last minute! You can play an after Christmas lunch game where a grown up gets to hide and call "Run Run as Fast as you can, You can't catch me I'm the Gingerbread man". Naturally he gets caught and has to give a gingerbread man to all who catch him. Good exercise! You could use all plain flour for a harder cookie or add 1 tsp baking powder if you don't have self raising flour. I have just finished making a batch and got 20 large men and 24 small biscuits."

  • Cream the butter and sugar until fluffy.
  • Add egg yolks.
  • Add Golden Syrup or honey.
  • Add vanilla extract.
  • Beat thoroughly.
  • In another bowl combine all dry ingredients and mix.
  • Add to creamed mixture about a cup at a time.
  • Knead lightly with floured hands towards the end.
  • The dough will be quite soft but should hold its shape.
  • Cut into 4 pieces and refrigerate for half an hour.
  • Take out a quarter of the mixture and lightly knead on a floured surface then roll out about 1/4 inch thick.
  • Cut into'men' with cookie cutters or into circles if preferred.
  • I use an egg lifter to help get them onto the baking trays.
  • Lightly beat the egg whites and brush over the shapes then sprinkle with a little granulated sugar.
  • Bake at 180 degrees C for 12 to 15 minutes depending on the size you make.
  • They should be golden brown.
  • Cool, then store in airtight container with a lining of kitchen paper to keep them crisp.

  1. Prepared exactly how described, I found that the cinnamon really overpowers the ginger taste (which I probably should have realised given it has equal parts cinnamon to ginger). Most people I gave them to seemed to loved them though, so I may be alone in thinking this. Next time I will add more ginger and less cinnamon.
     
  2. "MM MM a gingerman good" says my two year old after making these, we halved the recipe and forgot to brush with the egg white! On the advice of the last poster i added less cinnamon and more ginger and everyone loved them. Thanks Martha

Cooking is a relaxation and pleasure for me. I grow most of my own produce using the Moon phases to plant my veggie garden. I also like to catch our own fish. I don't like recipes that need a lot of preparation time so my recipes are selected for speed of preparation. After recovering from bi lateral breast cancer I have taken a keen interest in Ayurvedic cooking as many of the spices used in these dishes seem to have helped my recovery, so we eat spicy dishes several times a week.
