A recipe I remember my mother making for potlucks. Simple, refreshing and delicious - with or without the coconut! We also use VERY well drained crushed pineapple in place of the chunks, which seem too big. I'm a high school food & nutrition teacher now and we're trying this one out tomorrow!

This is delicious! My grandmother used to make it when I was a kid. She also added mandarin cherries. I'm going to make it again this weekend, but I think I might add strawberries.

This is one of my favorite salads! In fact, I just made this yesterday. It's original name is 5-cup salad...an old, but delicious recipe. I actually use crushed pineapple and prefer it. The trick is to drain it REALLY well before adding.
