Marmalade Pumpkin Bread

  1. To make bread: In a small bowl, combine flour, brown sugar, granulated sugar, pumpkin pie spice, baking powder, cinnamon, and salt; set aside.
  2. In a medium bowl, beat eggs.
  3. Beat in pumpkin, margarine, marmalade, and liqueur.
  4. Beat in dry ingredients.
  5. Spoon into greased 9-by-5-inch loaf pan.
  6. Tap on counter to release air bubbles.
  7. Bake in preheated 350 degree oven for 40 to 45 minutes or until wooden pick comes out clean.
  8. Cool 10 minutes in pan; cool completely on wire rack.
  9. Drizzle with Marmalade Glaze and slice.
  10. May be made several days in advance and may be frozen.
  11. To make marmalade glaze: In small bowl, combine marmalade and liquid.
  12. Then drizzle on cooled bread.

Thanks Dancer because this is a winner. Of course loving marmalade as I do helps. The only difference here is to cut back on sugar a little because we are trying to avoid as much sugar as possible. We like a tart taste anyway. Doesn t even need a glaze.

I was looking through the site for recipes to use up last night's pumpkin (and there is a lot from three lanterns!) I had all the ingredients for this so I thought I'd give it a go. The recipe was easy and the finished article was very nice indeed, nicely moist and with a slight sharpness from the marmalade (I used some my father-in-law made). In fact the loaf has barely cooled and, thanks to the kids, it's half gone! I am now going to make two more, one to send to the maker of the marmalade.

Loved this bread. Moist, sweet, delicious. i was out of orange liqueur and oj so i put extra marmalade and vanilla xtract. i also didn't use the glaze, but still yummy. every couple of bites you get a candied orange rind and its wonderful. thanks for this recipe
