  • In a 10 inch frying pan over high heat, add water and carrots.
  • Cover and bring to a boil then reduce heat to medium-high heat.
  • Cook carrots for about 8 minutes or when fork tender.
  • Don't forget to stir during cooking.
  • Drain carrots.
  • Return carrots to pan over high heat.
  • Add butter, orange marmalade, ginger, and nutmeg.
  • Stir often until marmalade mixture clings to carrots, 5 to 6 minutes.
  • Sprinkle with parsley and add salt and pepper to taste.

  1. These carrots were very good. The ingredients didn't include the water, so I used about 3/4 cup to cook the carrots. I reduced the ginger to 1/2 tsp. and added an extra tbs of butter. The end result was delicious! Thank you Audrey M for sharing your recipe!

  3. Very, very good for carrots. I'm not a huge fan of carrots but my DH likes them so I try to find new and interesting ways to prepare. I really liked the sweet orange flavor the marmalade gives these. Will make again.
     
  4. I made these almost like the directions. I boiled them first (without enough salt). I <b>THEN</b> found this recipe. I added the butter, marmalade, nutmeg, ginger, more salt and pepper to the pan. After the butter melted, I put the carrots back in. These were really good. I'm making chicken with marmalade in the sauce, so this works well tonite. Thanks, Audrey, for a delicious carrot recipe.

I am a mother of three and live in central Pennsylvania. My children were very active in after school activities and found we weren't spending anytime together at meal time. In 1998, I decided to start cooking my dinners in a crockpot so that we could have a home cooked meal together once everyone came home. My children now get so excited to see what we are having to eat and love the smell when they walk in the door. My family calls me the crock pot queen. LOL I use my crock pot everyday of the year. <br> <br>My three children are now in college and before they come home they request their favorite meal. I still continue to cook in the crock pot for my husband and I. It is nice after a long day to know your meal is ready. It also helps in keeping my grocery bill down. With zaar, I can print my shopping list and that is all I purchase is the ingredients on that list. <br> <br>Now, my two daughters have been crock pot cooking while in college. They find it is easy to cook for the themselves and their friends. It is an easy way to have friends over for dinner after classes <br> <br>I still love trying new recipes and purchasing cookbooks, especially crock pot cookbooks. <br> <br>Happy Cooking!
