- 1⁄2 cup Crisco
- 1 egg
- 1 cup marmalade
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 3⁄4 cup chopped walnuts
- Cream Crisco and egg together; stir in marmalade.
- Add flour, baking soda, vanilla and walnuts; mix well.
- Drop by heaping teaspoon onto cookie sheets.
- Bake at 375.
These were really good, but more like a soft biscuit than a cookie. Not sweet, and I would have added a glaze, but my husband liked them the way they were. They were for Christmas goody trays, and we figured they offset the other sweets on the tray. They were easy to make and I got more than 24. And as Bonjo pointed out, there were no cooking times given. I baked on parchment lined sheets for 7-9 minutes.
I think the recipe should have some salt added; taste was a little flat. Easy to make though I found that rounded teaspoons of dough made small almost bite size cookies which were great for the party I made them for. I also glazed them with a simple glaze made from powdered sugar, vanilla and water. This made them look more festive. Next time I will use chocolate flavored glaze. There were no pan instructions so I baked them on cookie sheets covered in parchment paper.
What a novel concept. . . marmalade in a cookie. I only had 1/2 cup marmalade so I used a half cup of blueberry jam as well. What neat and tasty green cookies I created. I'm sure there will be many comments about them at tomorrow's pool party!! Thanks Denise.
