I liked this approach to salad. The veggies marinated in a sun dried tomato and roasted garlic vinaigrette and were full of flavor. I spooned them onto individual portions of mixed greens and added a few homemade croutons. Not only was it attractive, but made a terrific lunch. Thank you for sharing the recipe!
