This was very good!! I used Japanese cucumber and Maui onion. The longer it sat, the better it tasted! Made for PAC Spring 2011.

Ingredients Nutrition

  • 4 cups raw vegetables (onions, bell peppers, zucchini, parsnips, cucumbers, carrots, etc.)
  • 14 cup balsamic vinegar
  • 1 tablespoon olive oil
  • salt and pepper

Directions

  1. Slice all vegetables thinly (food processor!).
  2. Toss with oil, vinegar and seasonings.
  3. Cover and marinate in the fridge several hours or overnight.
