A very refreshing twist of a side salad!
- 1⁄4 cup balsamic vinegar
- 1⁄4 cup vegetable oil
- 1 1⁄2 teaspoons white sugar
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 12 ounces cherry tomatoes
- 2 cucumbers
- 2 green onions, sliced
- 1⁄2 cup basil, chopped
- Whisk together the balsamic vinegar, vegetable oil,sugar, salt, and pepper in a bowl. Add tomatoes, cucumbers, onions, and basil. Toss evenly. Cover and chill in refrigerator at least 3 hours.
I made this today, minus the onions and basil (neither the Mister nor I eat them), and it is delicious! I marinated it for about 5 hours before trying, but it was wonderful, and the smell is lovely. Thanks for sharing! (I also cut up larger tomatoes. Cherry tomatoes just don't seem to have that 'real' tomato taste, to me!)
Delicious! Like reviewer "Lazarus," we also cut up larger tomatoes, since that's what we had around.
Needed to use some of this week's cucumbers.
