Marinated Tomatoes

ingredients

• 453.59 g tomatoes, cut in wedges
• 59.14 ml olive oil
• 44.37 ml red wine vinegar
• 22.18 ml dried parsley
• 1 scallion, greens only, chopped
• 2.46 ml dried oregano
• 4.92 ml kosher salt
• 2.46 ml sugar
• 2.46 ml garlic powder
• 1.23 ml fresh coarse ground black pepper

directions

1. Place tomatoes in tupperware container. Whisk together the rest of the ingredients and pour over the tomatoes. Cover the tomatoes and marinate at room temperature for at least an hour, or refrigerate up to 5 days. Allow to come to room temperature before serving.
