ingredients
- 118.29 ml fresh tarragon, minced
- 59.14 ml fresh thyme, minced
- 5 flat anchovies, minced
- 946.36 ml olives, mixed varieties (I used a combination of Kalamata, greens, etc)
- 236.59 ml good-quality olive oil
- 118.29 ml fennel bulb, thinly sliced (sometimes called anise)
- 59.14 ml lemon juice
- 29.58 ml minced onions
- 29.58 ml minced garlic
- 14.79 ml anise seed
- 9.85 ml fennel seeds
- 9.85 ml dried basil
- 4.92 ml black pepper
directions
- Mix all together and marinate in the refrigerator.
- Best after 24-48 hours.
- *Don't leave the anchovies out. I do not like them, but they lent a wonderful flavor to the mixture.

I currently live in Lancaster, Pennsylvania, although that will be changing shortly. I was living in Guatemala for the past few months, and plan on returning for a 2 year teaching assignment this coming January.
I have always loved to cook, and the more complicated recipe, the better. I also love any type of ethnic food, so most of the recipes you see in my cookbook are of that variety.
