Cook time is marinating time.
- 8 ounces black olives
- 8 ounces green olives
- 4 tablespoons extra virgin olive oil
- 3 sprigs fresh thyme
- 3 sprigs fresh rosemary
- 3 sprigs fresh oregano
- 4 small fresh bay leaves
- 1 large garlic clove, sliced thinly
- 2 lemon slices, quartered
- Mix everything together, cover and set aside for 3-4 hours before serving.

I only had black olives on hand, but they tasted great with all the herbs. The acidity of the lemon juice brightened the flavor perfectly.
