Sourced from www.taste.com.au This recipe lists as serving 12 as finger food. Toothpick food really :) It's very easy to halve. I quartered my mushies as they were quite large. Preparation Time is marination time. I thought they were even better the next day with some hot crusty bread. Matt has also lightly grilled (broiled) them and was very happy with the results and prefers them like this.
- 1⁄2 cup olive oil
- 1⁄4 cup red wine vinegar
- 2 garlic cloves, crushed
- 400 g button mushrooms
- 1⁄3 cup flat leaf parsley, chopped
- 1. Whisk oil, vinegar and garlic together in a large bowl.
- Add mushrooms and parsley, and toss well so that mushrooms are coated.
- Cover and leave to marinate for at least 1 hour.
