Delicious Hors d'Oeuvres! Prep time does not include chilling time.
- 2 lbs white button mushrooms
- 1⁄2 cup lemon juice
- 1⁄2 cup white wine (or dry vermouth)
- 1⁄2 cup olive oil
- 1 teaspoon oregano
- 1⁄2 small onion, grated
- 1 tablespoon salt and black pepper
- Simmer all ingredients with lid on for 10 minute.
- Sprinkle with chopped parsley before serving.
- Will keep for a week to ten days.
- Freezes well.
