Great side dish for any Italian meal or any other meal. Add these to a green salad to make a subtle difference. Serve at room temp.

My mushrooms were not same day bought (fresh) so I prefer to stir fry them very quickly in olive oil with the addition of 1 minced garlic clove. Very generous amounts of black pepper. This is very good with lots of refreshing flavor. Love the tarragon in this and the freshness of the lemon. - 4 tablespoons fresh lemon juice
- 1⁄4 cup lite olive oil
- 2 tablespoons fresh parsley, finely chopped
- 1⁄4 teaspoon tarragon
- salt and pepper
