Great side dish for any Italian meal or any other meal. Add these to a green salad to make a subtle difference. Serve at room temp.
- 8 ounces mushrooms, cleaned,quartered
- 4 tablespoons fresh lemon juice
- 1⁄4 cup lite olive oil
- 2 tablespoons fresh parsley, finely chopped
- 1⁄4 teaspoon tarragon
- salt and pepper
- Combine all the ingredients.
- mix well.
- add mushrooms, mix well.
- Cover and refrigerate 24 hours.
My mushrooms were not same day bought (fresh) so I prefer to stir fry them very quickly in olive oil with the addition of 1 minced garlic clove. Very generous amounts of black pepper. This is very good with lots of refreshing flavor. Love the tarragon in this and the freshness of the lemon. bland and definitely not special, which was disappointing because the recipe is relatively easy and healthy. HOWEVER, add some low fat Italian dressing to the recipe and you have a winner!!!!! People raved over it at the Christmas party.
