I keep a batch this in the fridge. It makes a lovely bruschetta. Easily doubled.

Ingredients Nutrition


  1. Toss all ingredients.
  2. Marinate.
  3. Cut a baguette lengthwise.
  4. Brush with oil.
  5. Rub with garlic.
  6. Toast lightly.
  7. Top with mozzarella mixture.
  8. Grill.

This is definitely going in my recipe book, it makes excellent bruschetta! I made it quicker by buying an 8 oz. tub of pearl-sized fresh mozzarella, so no dicing was needed. Then after draining the water, mixing the marinade ingredients the mozzarella tub. The soup in my photo is "Recipe #260591", which I made for Spring Pick-A-Chef.
