Marinated Grilled Chicken

ingredients
- 1⁄4 cup Dijon mustard
- 1⁄4 cup balsamic vinegar
- 1⁄4 cup lemon juice
- 2 tablespoons rosemary
- 1 tablespoon minced garlic
- 1⁄4 cup olive oil
- 4 -6 boneless chicken breasts
directions
- Mix all ingredients together except chicken.
- Place chicken in large baking dish.
- Pour marinade over chicken and cover for at least 2 hours in the fridge (or overnight for even yummier chicken).
- Grill and serve!

DH and I very much liked this chicken. Our 3 1/2-year old said it was good. The 2-year old disagreed. I think you really have to appreciate the flavour of rosemary to enjoy this dish, and luckily we do! I liked that I was able to throw it together in 10 minutes while the kids were colouring, and just let it sit fora few hours until DH got home. A few minutes on the GF grill were all it needed. I think this would be excellent cold on sandwiches too (we'll find out tomorrow!)
