- 1 cup olive oil
- 2 garlic cloves, minced
- 2 tablespoons paprika
- salt and pepper, to taste
- 1 split broiler chicken
- Combine all ingredients. Place chicken in a shallow pan and pour mixture over. Marinate for 3 to 4 hours.
- Grill bone side down for 25 minutes. Turn and continue cooking for another 20 minutes. Use marinade for basting.
Because of the rain today I had to bake rather than grill the chicken. But otherwise made as directed. The skin was nice and crispy and the meat was very tender. We would have liked more spices, herbs, and perhaps melted butter rather than olive oil or a blend of the two. Overall a nice recipe, just needs more flavor. Thanks for sharing. :)
