  1. With a vegetable peeler, peel carrots, halve lengthwise, then cut into 2 by 1/4 inch strips.
  2. In a medium saucepan of boiling salted water, cook carrots 2-3 minutes, until bright orange and just slightly softened.
  3. Drain and rinse briefly under cold running water.
  4. Place warm carrot strips in a small bowl. Add vinegar and sugar; toss to combine.
  5. Cover and refrigerate until ready to serve. Drain before serving.
