- With a vegetable peeler, peel carrots, halve lengthwise, then cut into 2 by 1/4 inch strips.
- In a medium saucepan of boiling salted water, cook carrots 2-3 minutes, until bright orange and just slightly softened.
- Drain and rinse briefly under cold running water.
- Place warm carrot strips in a small bowl. Add vinegar and sugar; toss to combine.
- Cover and refrigerate until ready to serve. Drain before serving.
