  1. Combine beef, onion, parsley, red pepper, and tomato, tossing well.
  2. Combine olive oil, vinegar, salt, pepper, oregano and mustard.
  3. Pour over salad, tossing well.
  4. Refrigerate at least 3 hours.
  5. At serving time, line serving dish with lettuce leaves, fill with salad, and garnish with tomato wedges.
  6. Serve with plenty of crusty bread.
