Marinated Asparagus With Sesame

- 1 lb asparagus
- 1⁄4 cup seasoned rice wine vinegar
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds, toasted
- salt
directions
- Snap off tough ends of asparagus.
- Bring about one inch of water to boil in a wide pot or frying pan.
- Add asparagus, off heat, and cover; let steam for 3 - 5 minutes, until asparagus is bright green and crisp-tender.
- Drain; immerse asparagus in ice water until cool, then drain again.
- Place asparagus in shallow container and add sesame oil and rice wine vinegar.
- Cover and refrigerate until cold, about 30 minutes or more.
- When ready to serve, sprinkle with toasted sesame seeds.
