Marinades Five and Six (Catalan and Thai)

"Apparently it will let me do two at a time. Again, adjust marinade to number of chicken breasts."

ingredients

• CATALAN

• 1 cup olive oil
• 2 lemons, cut into 1/4-inch rounds
• 1 bunch fresh rosemary, finely minced
• 1 bunch fresh thyme, finely minced
• 15 sage leaves, finely minced
• 6 garlic cloves, finely minced

• THAI

• 1 cup olive oil
• 1 cup coconut milk
• 1⁄2 cup lime juice
• 2 tablespoons lime zest
• 2 tablespoons fish sauce
• 1 chili pepper, seeded and finely chopped
• 1 bunch fresh cilantro, finely chopped

directions

1. Place frozen chicken breasts in a zip-top freezer bag and refrigerate for 12 to 48 hours, turning occasionally to distribute the marinade.
